Ingredients:
·2 cups cauliflower rice
·1 cup mixed vegetables (peas, carrots, corn)
·1/2 cup tofu, diced
·2 eggs, beaten
·2 tbsp soy sauce
·1 tbsp sesame oil
Preparation:
1.Sauté tofu in sesame oil until crispy.
2.Add vegetables and cauliflower rice, stir-fry.
3.Push the mixture to the side, pour beaten eggs, and scramble.
Serving Size: 1.5 cups
Storage: Store in an airtight container for up to 4 days.
