Greek Quinoa Salad


·1 cup quinoa, cooked

·1 cucumber, diced

·1 cup cherry tomatoes, halved

·1/2 cup Kalamata olives, sliced

·1/2 cup feta cheese, crumbled

·Red onion, finely chopped

·Olive oil, lemon juice, oregano, salt, and pepper


1.Mix quinoa with cucumber, tomatoes, olives, feta, and red onion.

2.Dress with olive oil, lemon juice, oregano, salt, and pepper.

Serving Size: 1 cup

Storage: Refrigerate in an airtight container for up to 3 days.
