Ingredients:
·1 cup quinoa, cooked
·1 can black beans, drained and rinsed
·1 cup cherry tomatoes, halved
·1 cucumber, diced
·1/4 cup red onion, finely chopped
·1/4 cup fresh cilantro, chopped
Preparation:
2.Toss well to mix.
3.Dress with a light vinaigrette of olive oil, lime juice, salt, and pepper.
