Quinoa and Black Bean Salad


·1 cup quinoa, cooked

·1 can black beans, drained and rinsed

·1 cup cherry tomatoes, halved

·1 cucumber, diced

·1/4 cup red onion, finely chopped

·1/4 cup fresh cilantro, chopped


1.In a large bowl, combine quinoa, black beans, tomatoes, cucumber, red onion, and cilantro.

2.Toss well to mix.

3.Dress with a light vinaigrette of olive oil, lime juice, salt, and pepper.

Serving Size: 1 cup

Storage: Refrigerate in an airtight container for up to 3 days.

Nutritional Information: Approximately 250 calories, 10g protein, 6g fiber.
